Malic acid is a tart-tasting colorless crystalline compound. It is dicarboxylic acid. Malic acid is readily soluble in water, methanol, ethanol; boundedly soluble in diethyl ether. It is almost insoluble in benzene and aliphatic hydrocarbons. Malic acid contains asymmetric carbon atom thereby it exists in two enantiomers and as racemate. In biological sources malic acid is homochiral and only exists as the L-malic acid. Malic acid is an intermediate of the tricarboxylic cycle (Krebs cycle) along with fumarate. Salts and esters of malic acid are called malate.

Production.

Industrially D,L-malic acid is produced by hydration of maleic or fumaric acid at 150-200°C.

Uses.

Malic acid is applied:

  • in food industries in preparation of wines, beverages, confectioneries as an acidulant, preservative,flavor additive;
  • for metal cleaning and plating;
  • in pharmaceutical products (as a depletive component and to cure huskiness);
  • as a retardant in plasters and cements;
  • as a component of cosmetics;
