Sodium benzoate (E211) is the sodium salt of benzoic acid. It is colorless crystalline powder, soluble in water. It is found naturally in cranberries, prunes, greengage plums, cinnamon, ripe cloves, and apples.

Production.

Sodium benzoate can be produced by reacting sodium hydroxide with benzoic acid.

Uses.

  • Basic application of sodium benzoate is as a food additive where it is used as a preservative, effectively killing most yeasts, bacteria and fungi;
  • Polymer stabilizer;
  • Corrosion inhibitor in heat exchangers
